PERIOD: APRIL - OCTOBER At the foot of the tower of Azzano there is an ancient farm-house with a splendid stone mill, still intact and used to this day to grind cereals, as well as an oil mill dating back to the 1700’s , not in use today. The oil mill has become a farm museum of oil production and farming traditions, and is also used for hosting oil tasting events, where extra virgin olive oils from various part of Umbria are sampled. Oil sampling session are led by Doc. Fabio Ciri, an agronomist and the owner of the farm and lodge “Le Due Torri”; Mr. Ciri is certified by the E.U. in tasting of olive oils, and introduces participants to the “Panel Test” technique used to evaluate oils included in the D.O.P. registry of typical Umbrian extra virgin olive oils. The sampling includes a brief description of the sensorial and gustatory capacities of the nose and mouth, as well as an introduction to several techniques for oil sampling. After this introduction, 4 mediterranean extra virgin olive oils are sampled, the quality of which ranges from 1 to 9 according to the Panel Test evaluation table. At the end of the sampling session, the particular qualities of mediterranean extra virgin olive oils will be explained, as well as the main defects which can be encountered in olive oils. The sampling ends with a festive bruschetta snack, made with traditional Umbrian bread baked in a wood oven, served with white wine, all organically produced in the farm of the owner.
